I am allllllll about super easy, super quick dinner recipes. I don’t know what it is about 5:00, but around here we call it CRAZY HOUR. It’s like something takes over my children and the natives become extremely hostile, if you know what I mean. It ain’t pretty.

So sometimes I am so frazzled and overwhelmed at supper time that I just want something that will get in those cranky bellies as soon as possible! That’s what is so great about this recipe. It’s only 4 ingredients and half of it is in my pantry and the other half is in my freezer, so even when I am running extremely low on groceries and fresh produce, I’ve always got this as a dinner option.

Also, for you momma’s with picky eaters – my two year old loves the sausage and green beans from this. He asks for seconds (Can I get a HALLELUJAH!?).

4 Ingredient Balsamic Beef & Quinoa Stir Fry:

Prep Time: 5 mins 

Cook Time: 30 Minutes

Serves: 4

Ingredients:

  • 1 pack Beef Smoked Sausage
  • 1 (16 oz) Bag Frozen Green Bean
  • 1/4 Cup Lite Balsamic Salad Dressing
  • 1 Cup Quinoa

Instructions:

  • Cook quinoa according to instructions on packaging. Set aside.
  • Fill large saucepan halfway with water and bring to boil. Add green beans and cook for 10 minutes. Place beans in colander and rinse with cold water. Set aside.
  • Thinly slice beef sausage into bite size pieces and cook in saucepan until they are warmed through and are crisped up a bit.
  • Add green beans to sausage and cook for a minute or so until they begin to sizzle. Add balsamic dressing and continually stir. Serve over quinoa and enjoy!

Italian Chicken

I don’t remember the circumstances behind this recipe, or his I even came up with it. It was probably me being lazy and not wanting to season anything.

But nevertheless, it came to be and it is one of my husband’s favorite chicken recipes of mine. Yay for easy favorites!

Ingredients:

– 1 lb chicken tenders
– 1/2 cup or more of Italian dressing

Directions:

Coat the bottom of a skillet with some of your Italian dressing and place chicken in skillet. Cover with the remainder of your dressing.

Cook on med-high heat until thoroughly cooked through. Sometimes I even add some whole cherry tomatoes in there while it’s cooking and they burst and add to the fresh flavor.

Gluten Free Sausage Balls

I remember the day I saw my first box of gluten free Bisquick. I wanted to do a happy dance in the aisle. Sausage balls were the first thing on my list to make!

This is not an original recipe from me, I just tweaked it with a few things I prefer, so I thought I’d share those with you!

Ingredients:

– 1 lb Tennessee’s Pride HOT sausage
– 1 14oz box of Bisquick
– 2 cups sharp shredded cheddar cheese
– 1 to 1 1/2 cups water or milk

Directions:

Combine first three ingredients, kneading with fingers. Add water as needed because the gluten free mix can tend to be very dry. You just want all of the ingredients to be mixed together well and slightly sticky.

I have just found that the hot sausage adds a great kick to these and the sharp cheddar enhances those spicy flavors. Yuuuumy!! Enjoy y’all!

If you want to win a man’s heart, I’m determined this recipe will do the trick. Any man I’ve ever talked to about favorite football foods has always mentioned “Lil’ Smokies.”

The good thing for you and me is that they are so so easy. But we don’t have to tell them that. (HA)

Ingredients:

– 1 14oz pack Hillshire Farms beef Lit’l Smokies
– 1/2 cup grape jelly
– 3/4 bottle (18oz) BBQ sauce

Directions:

Place sausages in skillet and cook on medium heat for 5-8 minutes. You just want to brown them slightly.

Next, add jelly and continually stir until melted. Add BBQ sauce and serve!

Gluten Free Parmesan Chicken

Gluten Free Parmesan Chicken

I am sometimes intimidated by recipes that call for breadcrumbs, because I have tried pre-packaged gluten free breadcrumbs and they are NASTY. So one day I was feeling brave and decided to make my own. (gasp)

I was so surprised how easy it was! You can do it too and no longer be intimidated by those breadcrumby recipes. (ha)

Ingredients:

-1 lb. chicken tenders

– 2 slices Udi’s (or any other brand) gluten free bread

– 1 cup Parmesan cheese shredded

– 1 cup Ranch dressing

Directions:

Toast gluten free bread until crisp. Then grind in food processor until finely ground. Place breadcrumbs on plate.

Place ranch dressing on separate plate and dip chicken tenders in ranch and then coat with breadcrumbs. Place in Pyrex baking dish and top with cheese.

Bake at 350 degrees for15-30 minutes.
